Grilled Herb and Honey Pork Loin

Tender and flavorful grilled pork loin roast is prepared by marinating it in beer and honey.

Instructions

  1. Preheat a grill to medium heat.

  2. Place the pork roast in a large zip-top bag.

  3. Combine beer, honey, Dijon mustard, chopped onion, olive oil, minced garlic, rosemary, salt, and black pepper; pour this marinade over the pork. Seal the bag and marinate for 1 to 2 hours in the refrigerator.

  4. Remove the pork from the bag and place it on a rotisserie over a drip pan, reserving the marinade.

  5. Bring the reserved marinade to a boil in a saucepan, then simmer for 5 to 7 minutes.

  6. Baste the roast with the cooked marinade every 20 minutes. Cook for approximately 1.5 hours, or until an internal temperature of 160 F is reached.

  7. Remove the roast from heat and let it rest for at least 5 minutes.

  8. Carve the pork roast crosswise into 0.5-inch slices to serve.
