Grilled Hawaiian Pork Chops

Instructions

  1. Preheat grill to medium-high (400-425 F).

  2. Combine reserved pineapple juice, soy sauce, vegetable oil, onion, garlic, and brown sugar to create the marinade.

  3. Marinate pork chops and pineapple slices in the mixture for 2 hours.

  4. Remove pork and pineapple from marinade. Bring the remaining marinade to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally. Set aside.

  5. Oil grill grates. Grill pork chops for about 12 minutes, turning and basting, until an internal temperature of 145 F is reached.

  6. During the final minutes of pork cooking, grill pineapple slices for 2-3 minutes until browned.

  7. Remove pork and pineapple from the grill. Rest the pork for 5 minutes, then serve topped with grilled pineapple and the reserved marinade.
