Instructions

  1. Prepare the Roasted Red Pepper Puree: Blend roasted peppers, garlic, and hot sauce until smooth, then season to taste with salt and pepper.

  2. Make the Goat Cheese Sauce: Combine olive oil, wine, and chicken broth in a saucepan; boil until reduced by half. Stir in parsley, goat cheese, salt, pepper, and garlic herb seasoning, then simmer until thickened.

  3. Flatten chicken breasts and season both sides with salt and pepper.

  4. Lightly oil a grill or grill pan, then cook the chicken over medium-high heat for 3 to 5 minutes per side, or until cooked through.

  5. Serve grilled chicken on a bed of red pepper puree, topped with goat cheese sauce.
