Grilled Chicken Tikka

Instructions

  1. Preheat a grill to medium-high or the oven to 400 F with a rack in the upper portion.

  2. Process coriander, ginger, garlic, garam masala, peppercorns, salt, and optional food coloring in a food processor until a smooth paste forms.

  3. Transfer the paste to a large bowl, mix in yogurt and adjust seasonings. Add chicken pieces and toss to coat. Cover and refrigerate overnight.

  4. Thread marinated chicken onto skewers, spacing pieces for even cooking.

  5. Cook skewers on the preheated grill or oven, using a tray for drippings, for 12 to 15 minutes until browned and tender.

  6. Combine onion rings with lime juice and chaat masala in a separate bowl; mix to coat.

  7. Top cooked chicken with prepared onions, garnish with fresh coriander, and serve with naan or Basmati rice.
