Grilled Chicken Panini Sandwich With Pesto

A quick chicken pesto panini, featuring prepared pesto and precooked chicken, makes for a delicious and fast lunch or light dinner.

Instructions

  1. Preheat a grill or panini maker.

  2. Butter one side of each bread slice.

  3. Spread 1/2 tablespoon pesto onto the unbuttered side of two bread slices.

  4. Layer bacon, chicken, and cheese over the pesto.

  5. Complete the sandwiches with the remaining buttered bread slices.

  6. Cook in the panini maker for 4 to 6 minutes, or grill for 2 to 3 minutes per side until golden.

  7. Cut sandwiches in half and serve, with extra pesto if desired.
