Instructions

  1. Heat a large skillet over medium heat. Sauté onions, olive oil, and butter for 10 minutes until softened.

  2. Reduce heat to low and continue cooking the onions, stirring occasionally, for 15 to 25 minutes until golden brown; stir more frequently as they caramelize.

  3. Stir in sugar, salt, and pepper; cook for an additional 2 to 3 minutes, then remove from heat and let cool.

  4. Assemble four sandwiches by layering cheese, a few spoonfuls of caramelized onions, and another slice of cheese between bread slices.

  5. Evenly spread softened butter on the outsides of the assembled sandwiches.

  6. Cook the sandwiches in the skillet over medium heat, in batches if necessary, covering the pan and flipping once, until the bread is toasted and the cheese is melted. Serve immediately.
