Instructions

  1. Preheat the grill to medium-high heat (400-425 F).

  2. Trim, wash, peel, and dry 12 medium carrots; cut thicker carrots in half lengthwise.

  3. Place carrots in a baking dish and coat with 3 tablespoons olive oil.

  4. Season the carrots with salt, pepper, 1/2 teaspoon rosemary, and 1/2 teaspoon thyme.

  5. Grill the carrots covered for 7-8 minutes per side until seared with grill marks and tender-crisp.
