Grilled Caprese Chicken Recipe

Instructions

  1. Process olive oil, lemon juice, 6 whole basil leaves, garlic, sea salt, and white pepper until well combined; adjust salt as needed.

  2. Marinate chicken breasts in this mixture within a sealed plastic bag, refrigerating for 1 to 2 hours.

  3. While the chicken marinates, make the balsamic reduction by boiling vinegar in a saucepan, then simmering for 8-10 minutes until thick and syrupy; remove from heat and set aside.

  4. Preheat the grill to medium heat.

  5. Grill the marinated chicken breasts for 8-10 minutes per side.

  6. Top each breast with a slice of mozzarella and 1-2 tomato slices, then cook for an additional 2-3 minutes until the chicken reaches an internal temperature of 165°F.

  7. Remove from heat and garnish the chicken with the reduced balsamic and the remaining 3 chopped basil leaves before serving.
