Grilled Butter Chicken

Instructions

  1. Preheat the grill to medium-high heat.

  2. Place skinless quartered chicken in a shallow dish.

  3. Combine all ingredients, except butter or ghee, in a bowl and pour over the chicken.

  4. Cover and marinate the chicken in the refrigerator for 8 to 12 hours.

  5. Remove chicken from the refrigerator and let it stand for 20 to 30 minutes before grilling.

  6. Meanwhile, melt 1/2 cup butter in a saucepan and cook for 3 to 5 minutes.

  7. Grill chicken on a lightly oiled rack for 35 to 45 minutes, turning and basting with melted butter frequently.

  8. Once fully cooked, remove chicken from the grill and serve topped with any remaining melted butter.
