Grilled Bone-In Chicken Thighs

Instructions

  1. Preheat a gas grill to medium (350 F to 400 F) on one side, or prepare a charcoal grill with hot coals on one side.

  2. Pat chicken thighs dry, then season with salt and pepper; refrigerate uncovered for 8-12 hours to dry the skin.

  3. Place chicken skin-side down on oiled grates over the lit side of the grill. Grill covered for 5-6 minutes until crispy and marked.

  4. Flip thighs and move to the unlit side. Continue grilling covered for 20-25 minutes, turning halfway, until internal temperature reaches 175 F.

  5. Remove chicken from grill and let rest for 5-10 minutes before serving.
