Grilled Blackened Red Snapper

Blackened red snapper fillets are quickly grilled at high heat, developing a rich seasoning crust, and finished with a zesty lemon butter sauce.

Instructions

  1. Preheat a gas or charcoal grill to high heat (500F to 600F).

  2. Combine paprika, cayenne, 1 teaspoon salt, garlic salt, onion salt, thyme, oregano, and pepper.

  3. Sprinkle the seasoning mixture over both sides of each snapper fillet.

  4. Bring lemon juice to a simmer, then remove from heat and stir in butter and salt to taste.

  5. Oil the hot grill grates thoroughly just before adding fish.

  6. Grill snapper fillets 4 to 5 minutes per side until blackened and cooked through (145F internal temperature).

  7. Plate the fish, then mix parsley into the lemon butter and spoon 1/4 of the sauce over each fillet.
