Grilled Artichokes Recipe

Instructions

  1. Preheat grill to medium (350-375°F) and start boiling 1/2 inch of salted water in a deep pan.

  2. Trim artichoke stems, snip thorny leaf tops, remove the crown, and discard tough outer leaves, rubbing cut surfaces with lemon.

  3. Place trimmed artichokes in boiling water, cover, simmer for 20 minutes; check for tenderness and continue cooking if needed. Drain when tender.

  4. Pat drained artichokes dry, halve them lengthwise, and scoop out the fuzzy choke.

  5. Brush cut artichoke halves with garlic olive oil; season with salt, pepper, and paprika.

  6. Place artichokes cut-side down on the preheated grill; cook for 8-10 minutes until grill marks appear.

  7. Serve warm, optionally with extra salt and lemon juice.
