Instructions

  1. Preheat grill to medium-high heat.

  2. Rinse and pat dry the char fillets; place them in a baking dish.

  3. Combine mustard, honey, oil, garlic, thyme, lemon juice, salt, and pepper in a small bowl.

  4. Coat fillets with the mixture, then cover and refrigerate for 30-40 minutes.

  5. Oil the preheated grill grates.

  6. Grill fish, skin side down, for 5 minutes; discard excess marinade. Flip and cook for another 3-5 minutes.

  7. Remove fish from grill when it flakes easily and reaches 145 F internal temperature; serve immediately.
