Instructions

  1. Preheat a charcoal or gas grill for indirect cooking to 400 F.

  2. Combine 1 1/2 cups flour and salt; cut in shortening until coarse crumbs form.

  3. Gradually stir in ice water to create a dough ball, then wrap and chill for 20 minutes.

  4. Roll dough into an 11-inch circle and fit into a 9-inch metal pie plate, trimming edges as desired.

  5. In a small bowl, combine 2 tablespoons flour, sugar, nutmeg, cinnamon, and cloves.

  6. Toss apple slices with lemon juice in a large bowl, then add the flour-spice mixture, tossing to coat.

  7. For the topping, combine 1/2 cup flour with brown sugar and cut in butter pieces until crumbly.

  8. Sprinkle this butter mixture evenly over the apples in the pie crust.

  9. Place the pie on a cookie sheet and bake on the grill over indirect heat for 50 to 60 minutes until apples are tender and bubbly.

  10. Remove the pie from the grill and cool completely for about 2 hours before serving.
