Instructions

  1. Prepare a gas or charcoal grill for indirect heat, preheating it to 400-475 F and establishing a cool zone.

  2. Halve the squash lengthwise and remove the seeds and strings.

  3. Trim a 1/2-inch slice from the round side of each squash half to create a flat bottom.

  4. Wrap the bottom and sides of each squash half with foil.

  5. Combine butter, brown sugar, walnuts, nutmeg, and salt in a bowl, then divide the mixture among the squash halves.

  6. Place the stuffed squash over the grill's cool zone, cover, and cook for approximately 1 hour or until tender.
