Green Tomato Quick Bread

A flavorful green tomato quick bread provides an excellent method to utilize late-season green tomatoes.

Instructions

  1. Preheat the oven to 350°F and lightly spray an 8x4-inch loaf pan.

  2. In a large bowl, combine 1 cup grated green tomatoes, 1/2 cup raisins, 1/2 cup chopped walnuts, 3/4 cup sugar, 1/2 cup oil, and 2 beaten eggs.

  3. In a separate bowl, whisk 2 cups flour, 3/4 teaspoon baking powder, 3/4 teaspoon baking soda, 3/4 teaspoon salt, and 1/2 teaspoon cinnamon.

  4. Stir the dry ingredients into the tomato mixture until just combined, avoiding overmixing.

  5. Pour batter into the prepared pan and bake for 55 minutes, or until a toothpick comes out clean.

  6. Let stand for 10 minutes, then remove from the pan to cool completely on a wire rack.

  7. For frosting, whip 4 ounces softened butter and 3 ounces softened cream cheese until fluffy.

  8. Beat in 1 1/2 cups confectioners' sugar, 2 teaspoons vanilla, and 1/4 teaspoon almond extract.

  9. Spread frosting on the cooled quick bread, then refrigerate until firm before slicing.
