Green Tomato Mincemeat Recipe

An old-fashioned mincemeat recipe features green tomatoes, apples, spices, and candied peels for a classic preserve.

Instructions

  1. Combine all ingredients (green tomatoes, apples, raisins, currants, candied citron or peel, cinnamon, allspice, cloves (omit if freezing), salt, brown sugar, vinegar, and lemon juice) in a large heavy pan.

  2. Simmer the mixture for at least one hour until tender and thick, stirring frequently to prevent sticking.

  3. To can: Start boiling water for a water bath. Pour the hot mincemeat into hot, sterile jars, leaving 1/2-inch headspace, then seal promptly. Process jars in the boiling water bath for 20 minutes, then store in a cool, dry place.

  4. To freeze: Pack cooled mincemeat into freezer containers, leaving 1 inch headspace, then seal and freeze promptly.
