Green Tomato Cake With Nuts

Instructions

  1. Preheat oven to 350°F and grease and flour a 9x13x2-inch baking pan.

  2. In a large bowl, beat sugar, oil, eggs, and vanilla until smooth.

  3. Sift together flour, salt, baking powder, cinnamon, and nutmeg, then slowly beat into the egg mixture until well blended.

  4. Stir in pecans, raisins, and tomatoes.

  5. Pour the batter into the prepared pan and top with coconut if desired.

  6. Bake for 55 to 65 minutes, or until a wooden pick inserted into the center comes out clean.
