Green Tea (Matcha) Ice Cream Recipe

Instructions

  1. Whisk hot water with matcha powder and set aside.

  2. In a saucepan, whisk egg yolks with sugar, then gradually add milk and mix well.

  3. Heat the egg mixture over low heat, stirring constantly until it slightly thickens.

  4. Remove from heat and cool the pan by soaking its bottom in ice water.

  5. Stir the matcha mixture into the egg mixture and continue to cool in ice water.

  6. Whip heavy cream until slightly thick, then gently fold it into the cooled matcha-egg mixture.

  7. Pour the mixture into an ice cream maker and churn according to its instructions.

  8. Transfer to a freezer-safe container and freeze for at least 8 hours before serving.
