Green Pea and Ham Soup Recipe

Instructions

  1. In a large saucepan, heat oil over medium heat, then cook onions until translucent, about 5 minutes.

  2. Add garlic and cook for 1 minute.

  3. Stir in stock, chopped parsley, mint leaves, 2/3 of the peas, and 2/3 of the ham, reserving the rest.

  4. Simmer gently for 10 minutes until peas are cooked and ham is warmed.

  5. Blend the soup in batches using a food processor until thick and chunky. Adjust consistency by reducing or adding boiling water if needed.

  6. Return soup to the saucepan, add remaining peas and ham, and heat until warmed through. Season with salt and pepper, being cautious with salt due to ham.
