Instructions

  1. Preheat the broiler.

  2. Cook and drain fresh or frozen beans until crisp-tender.

  3. Sauté onion and parsley in 2 tablespoons butter until tender, then stir in flour, lemon zest, salt, and pepper.

  4. Gradually add milk, cooking and stirring until the mixture thickens and bubbles.

  5. Combine this hot mixture with sour cream and the cooked beans, heating until the sauce barely bubbles.

  6. Transfer the bean mixture to a 1 to 1 1/2-quart casserole dish and top with shredded cheese.

  7. Melt the remaining 1 tablespoon butter, toss with breadcrumbs, and sprinkle over the cheese.

  8. Broil 5 inches from the heat for 1-2 minutes until the cheese is melted and the breadcrumbs are browned.

  9. Serve immediately.
