Green Bean Red Onion Salad

An easy summer salad features steamed green beans and thinly sliced red onions.

Instructions

  1. Start boiling 1/4 cup of water in a large skillet.

  2. Trim green beans, add them to the boiling water with salt, cover, and cook for 3 minutes until crisp-tender and water evaporates.

  3. Rinse cooked beans with cold water and pat dry. Set aside.

  4. Peel and halve the onion, then slice into thin half-moons. (Optionally rinse slices with cold water to reduce strong flavor, then pat dry.) Set aside.

  5. In a large bowl, whisk oil, vinegar, and mustard. Season with salt and pepper.

  6. Combine cooked beans and sliced onions with the dressing; toss to coat thoroughly.

  7. Serve immediately or marinate; cover and chill if storing for more than an hour.
