Instructions

  1. Heat 1/2 to 3/4 inch of oil in a nonstick frying pan.

  2. In a large bowl, combine chopped tomatoes, grated zucchini, onion, and herbs; season with salt and pepper. Stir in enough flour for a thick batter.

  3. Once oil is hot, drop batter by tablespoonfuls into the oil. Fry until golden brown, turning once.

  4. Using a slotted spoon, remove fritters and drain on paper towels.
