Greek Style Lamb Kabobs With Pita and Tzatziki Sauce Recipe

Instructions

  1. Combine oil, lemon juice, oregano, garlic, salt, and pepper in a small bowl.

  2. Add lamb cubes, toss to coat, then cover and marinate in the refrigerator for 6 hours to overnight.

  3. Preheat a gas or charcoal grill to 350-375°F.

  4. Drain marinated lamb and discard marinade.

  5. Thread 5 lamb cubes, 4 tomatoes, and 4 onion pieces onto each of 4 skewers.

  6. Grill skewers for 12-15 minutes, turning halfway, until desired doneness is reached (145°F for medium-rare, 160°F for medium, 170°F for well).

  7. Serve kebabs with warm pita bread, Tzatziki sauce, and salad greens.

  8. For Tzatziki: Stir yogurt, cucumber, lemon juice, mint, salt, and pepper in a medium bowl.

  9. Refrigerate Tzatziki for at least 1 hour.
