Greek-Style Barley Salad Recipe

Instructions

  1. Start boiling 3 cups of water with 1/2 teaspoon of salt.

  2. Add barley, cover, and simmer for 40 minutes or until cooked, then let it cool slightly.

  3. Whisk together olive oil, lemon juice, and red wine vinegar.

  4. Combine the cooled barley with the dressing, red onion, tomato, bell pepper, feta cheese, kalamata olives, and fresh herbs.

  5. Season with oregano and salt, adjusting to taste.

  6. Serve chilled or at room temperature.
