Instructions

  1. Bring honey to a boil in a saucepan, optionally with lemon peel.

  2. Stir in sesame seeds and continue cooking until fully mixed and the mixture boils again.

  3. Remove from heat, then discard the lemon peel.

  4. Spread the hot mixture thinly (about 1/4-inch deep) and evenly on baking parchment.

  5. Allow pasteli to cool to room temperature, then refrigerate on the parchment for 2-3 hours.

  6. Cut the pasteli with parchment into small pieces using kitchen shears and serve.

  7. Peel off parchment to eat; store leftovers in an airtight container in the refrigerator.
