Preheat oven to 350 F (176 C).

Peel and quarter potatoes lengthwise; season chicken and potatoes with salt and pepper.

Arrange chicken and potatoes in a roasting pan.

Distribute oregano, garlic, olive oil, lemon juice, and lemon slices over the chicken and potatoes. Pour in water.

Roast uncovered for 1 hour 40 minutes, turning the chicken after 50 minutes.

Replenish water with 1/4 to 1/2 cup as needed, ensuring some liquid remains in the pan.

Remove from oven when the chicken's internal temperature reaches 165 F.
