Greek Halva: Semolina Pudding With Raisins and Nuts

Instructions

  1. In a medium saucepan, combine water, sugar, honey, cinnamon sticks, cloves, and orange peel; boil for 5 minutes, then simmer.

  2. Remove spices and orange peel from the hot syrup.

  3. In a larger saucepan, heat both oils over medium-high heat, then add coarse semolina and cook, stirring frequently, until golden.

  4. Remove semolina from heat and carefully add the hot syrup, stirring thoroughly.

  5. Stir in walnuts, pine nuts, and raisins; continue cooking and stirring until all liquid is absorbed.

  6. Cover the pot tightly and let cool for 10 to 15 minutes.

  7. Spoon the mixture into a mold or ramekins, then allow to cool completely before serving.

  8. Serve, optionally garnished with cinnamon and chopped walnuts.
