Greek Coconut Cake With Syrup Recipe

Instructions

  1. Preheat the oven to 340 F (170 C).

  2. Combine all syrup ingredients in a saucepan, boil for 7-8 minutes, then cool.

  3. Beat egg whites with salt until stiff peaks form.

  4. In a separate bowl, beat egg yolks, margarine, and sugar until creamy; then beat in milk.

  5. Whisk flour and baking powder, then beat into the mixture.

  6. Stir in the coconut.

  7. Gently fold in the beaten egg whites.

  8. Grease and flour a 15 x 10-inch baking pan.

  9. Transfer batter to the prepared pan and spread evenly.

  10. Bake at 340 F (170 C) for 40-45 minutes until golden.

  11. Remove cake from oven, cut into pieces, and pour cooled syrup evenly over the hot cake.

  12. Sprinkle the top with 4-5 tablespoons of shredded coconut.

  13. Allow 2-3 hours for syrup to absorb and cake to cool completely before serving.
