Greek Coconut Cake With Syrup Recipe

Instructions

Preheat the oven to 340 F (170 C).

Combine all syrup ingredients in a saucepan, boil for 7-8 minutes, then cool.

Beat egg whites with salt until stiff peaks form.

In a separate bowl, beat egg yolks, margarine, and sugar until creamy; then beat in milk.

Whisk flour and baking powder, then beat into the mixture.

Stir in the coconut.

Gently fold in the beaten egg whites.

Grease and flour a 15 x 10-inch baking pan.

Transfer batter to the prepared pan and spread evenly.

Bake at 340 F (170 C) for 40-45 minutes until golden.

Remove cake from oven, cut into pieces, and pour cooled syrup evenly over the hot cake.

Sprinkle the top with 4-5 tablespoons of shredded coconut.

Allow 2-3 hours for syrup to absorb and cake to cool completely before serving.
