Greek Batter-Fried Eggplant

Instructions

  1. Heat oil to high in a large pot.

  2. Salt eggplant slices with 1 1/2 teaspoons of salt and let sit for 20-25 minutes; drain the accumulated liquid before proceeding.

  3. Prepare batter by slowly stirring soda water, flour, and salt together in a bowl.

  4. Coat eggplant in batter, then fry pieces in hot oil for 5-6 minutes until golden and puffed on both sides.

  5. Drain fried eggplant on paper towels to remove excess oil, then serve hot.
