Grated Potato Dumplings Recipe - Polish Pyzy

Polish potato dumplings are made with a dough combining raw, grated potatoes and cooked, mashed potatoes.

Instructions

  1. Start boiling salted water for the cubed potatoes.

  2. Cube half the potatoes, cook in boiling water until tender, then drain, mash, and place in a large bowl.

  3. Finely grate the remaining whole potatoes.

  4. Drain grated potatoes thoroughly in a cloth, squeezing out all water; save the potato starch and add it, along with the squeezed potatoes, to the mashed potatoes.

  5. Mix in eggs, salt, and both flours until the dough holds its shape.

  6. Roll spoonfuls of dough into balls with floured hands.

  7. Bring a large pot of salted water to a boil, cook dumplings for 4 to 5 minutes until they float, then drain.

  8. Fry bacon until golden brown.

  9. Serve cooked dumplings topped with bacon and drippings.
