Instructions

  1. Preheat the oven to 400 F.

  2. Combine grapes, sugar, cornstarch, lemon juice, lemon zest, vanilla, and salt in a saucepan. Cook over medium heat for 15-20 minutes, mashing some grapes and stirring occasionally to reduce moisture, then cool completely.

  3. In a large bowl, blend flour, shortening, butter, and salt until pea-sized crumbs form. Gradually add water, mixing until the dough just comes together.

  4. Divide the dough into two balls.

  5. Roll out one dough ball into a 12-inch circle and place it in a pie tin.

  6. Roll out the second dough ball into a 12-inch circle, cutting a design into the top.

  7. Pour the cooled filling into the pie crust, then top with the second crust. Crimp the edges and dust with granulated sugar.

  8. Bake on the lowest oven rack for 45 minutes. If the crust darkens excessively after 30 minutes, reduce the temperature to 350 F.

  9. Allow the pie to cool to room temperature before serving.
