Grain Bowl With Vegetables

Instructions

  1. Press cubed tofu between paper towels with a pan for 10 minutes, then season with salt and pepper.

  2. Heat canola oil in a large saute pan and fry tofu on medium-high heat until browned; remove and set aside.

  3. Blend all dressing ingredients until smooth, then add 1 tablespoon of water and blend again until creamy.

  4. Stir 1/4 cup of the dressing into the cooked quinoa.

  5. Divide the dressed quinoa into four bowls, topping with crispy tofu, carrots, cabbage, cucumbers, bean sprouts, scallions, and crushed peanuts.

  6. Drizzle with remaining dressing, garnish with lime wedges and cilantro, and serve immediately.
