Instructions

  1. Heat olive oil in a large Dutch oven or sauté pan over medium-high heat. Add ground beef and onion, cooking 5 to 7 minutes until the beef is no longer pink, breaking it up with a spatula.

  2. Stir in garlic, bell pepper (if using), Italian seasoning, bay leaf, kosher salt, and black pepper; cook for 1 minute.

  3. Add beef broth, tomato sauce, and diced tomatoes, bringing the mixture to a boil. Cover and reduce heat to low, then simmer for 20 minutes.

  4. Stir macaroni into the sauce mixture, cover, and cook over medium-low heat for 12 to 15 minutes until the pasta is tender.

  5. Mix in the cheese until melted. Adjust salt and pepper as needed, then remove from heat and garnish with parsley, if desired.
