Instructions

  1. Preheat the oven to 375 F and line two baking sheets.

  2. Boil water, butter, and salt in a large saucepan; once butter melts, add flour.

  3. Stir the mixture for 1 minute until a sticky dough ball forms and pulls away from the pan.

  4. Reduce heat to low and cook, stirring continuously, for 1 to 1.5 minutes until the mixture slightly dries, then remove from heat and cool for 5 minutes.

  5. Beat in eggs, one at a time, until fully incorporated.

  6. Stir in cheeses, nutmeg, and pepper.

  7. Drop heaping teaspoonfuls of dough onto prepared baking sheets, leaving one inch between each.

  8. Bake for 25 to 30 minutes, rotating sheets halfway through, until golden brown and puffed; serve immediately.
