Gordon Ramsay's Spicy Vegetable and Paneer Wraps
An adaptable Indian street food wrap features spicy vegetables and paneer, allowing for optional meat or chicken additions.

Instructions

Start boiling salted water for blanching spinach.

Blanch spinach for 30-60 seconds, then drain and set aside.

Heat oil in a large pan over medium heat. Sauté ginger, garlic, chili, and onion for 2-3 minutes.

Add red pepper, carrots, salt, garam masala, chili powder, and cumin. Cook until vegetables slightly soften.

Stir in paneer strips, chopped coriander, and lemon juice; cook for a few minutes, then remove from heat.

Warm chapattis in a dry pan to soften.

Spread coriander and chili raita on each chapatti, layer with blanched spinach, and top with the vegetable and paneer filling. Roll each chapatti to enclose.

Wrap each filled chapatti in baking parchment and foil. Serve warm, or warm through in a hot oven if cooled.
