Gorditas de La Villa are small, slightly sweet, rustic snack cakes reminiscent of those found outside Mexico's Guadalupe Basilica.

Instructions

  1. Combine masa harina with lard or shortening.

  2. Mix in sugar, salt, and baking soda.

  3. Beat egg yolks with water, then add to the masa mixture; knead until a soft, smooth dough forms, adding more water if necessary.

  4. Form dough into 1-inch balls, then press into 2-inch disks, approximately 0.5-inch thick.

  5. Cook disks on a comal or non-stick skillet over medium heat for 2-3 minutes per side, until browned and cooked through.

  6. Repeat forming and cooking until all dough is used, keeping cooked gorditas warm.

  7. Serve warm, plain or topped with syrup, jam, or sweetened condensed milk. Store leftovers in an airtight container at room temperature.
