Gooseberry Compote

Instructions

  1. Preheat the oven to 180C/350F/gas 4.

  2. Scatter gooseberries on a baking sheet, sprinkle with sugar, and bake for 20-30 minutes until tender.

  3. Transfer the baked gooseberries to a bowl and mash to release their juices; adjust sweetness as desired based on intended use.

  4. Stir in elderflower cordial if using.

  5. The finished compote can be used immediately, refrigerated for several days, or frozen for extended storage.

  6. Optionally, for a smoother compote, blend and sieve it; for a chunkier version, blend two-thirds of the berries, sieve, then reincorporate the remaining whole berries.
