Golden Purses Thai Appetizer

A classic Thai snack, golden purses are filled with seasoned shrimp or crabmeat.

Instructions

  1. Preheat the oven to a low temperature to keep the purses warm.

  2. Process cooked shrimp with all spice paste ingredients until well combined.

  3. Taste the mixture and add 1/2 tablespoon more fish sauce if necessary.

  4. Lay out wonton wrappers, then wet the edges of each with water using a brush.

  5. Place 1/2 to 1 teaspoon of filling in the center of each wrapper, then pinch the sides together to form a purse; continue until all filling is used.

  6. Heat oil, at least 1-inch deep, in a wok or frying pan over medium-high heat.

  7. Test oil readiness by dipping a wonton wrapper corner; if it sizzles, the oil is ready.

  8. Fry 4-5 purses at a time, turning after 30 seconds or once golden-brown, until uniformly golden.

  9. Drain fried purses on a towel and transfer them to the preheated oven to keep warm.

  10. Before serving, carefully tie each purse with a chive.

  11. Serve the golden purses with Thai sweet chili sauce.
