Instructions
-
Preheat the oven to a low temperature to keep the purses warm.
-
Process cooked shrimp with all spice paste ingredients until well combined.
-
Taste the mixture and add 1/2 tablespoon more fish sauce if necessary.
-
Lay out wonton wrappers, then wet the edges of each with water using a brush.
-
Place 1/2 to 1 teaspoon of filling in the center of each wrapper, then pinch the sides together to form a purse; continue until all filling is used.
-
Heat oil, at least 1-inch deep, in a wok or frying pan over medium-high heat.
-
Test oil readiness by dipping a wonton wrapper corner; if it sizzles, the oil is ready.
-
Fry 4-5 purses at a time, turning after 30 seconds or once golden-brown, until uniformly golden.
-
Drain fried purses on a towel and transfer them to the preheated oven to keep warm.
-
Before serving, carefully tie each purse with a chive.
-
Serve the golden purses with Thai sweet chili sauce.
