Instructions

  1. Start boiling water for basmati rice if serving with it.

  2. Soak cauliflower florets in warm salted water for 15 minutes, then drain and set aside.

  3. Rinse chickpeas under running water and set aside.

  4. Heat oil in a deep pan over medium heat, then sauté chopped onions until soft and translucent.

  5. Add split green cardamom pods and garlic; fry for 2-3 minutes.

  6. Stir in garam masala, brown sugar, chopped tomatoes, and ground almonds. Sauté until tomatoes soften, a thick paste forms, and oil separates.

  7. Add rinsed chickpeas and cook for 10 minutes.

  8. Incorporate cauliflower florets; cook for 2-3 minutes to maintain crunch.

  9. Stir in cream, then remove from heat.

  10. Garnish with chopped coriander and serve hot with basmati rice or naan.
