Instructions

  1. Heat milk in a pot to 86 F, then turn off the heat.

  2. Sprinkle in the starter culture and stir.

  3. Cover the pot and culture the milk for 12 to 18 hours, ideally at 73 F, until it has a yogurt-like consistency with some whey.

  4. Line a colander with double-layered cheesecloth, then pour the cultured milk into it.

  5. Gather the cloth into a sack, tie it, and hang it over a deep bowl to drain for 6 to 12 hours without squeezing.

  6. Scrape the drained cheese into a bowl and add salt if desired.

  7. Flavor the goat cheese with herbs or spices as preferred.

  8. Shape the cheese using a biscuit or cookie cutter if desired.

  9. Store the goat cheese in an airtight container in the refrigerator for up to one week.
