Goat Cheese Pasta

Instructions

  1. Start boiling 4 quarts of water with 4 teaspoons of kosher salt in a large pot for pasta.

  2. While water heats, warm olive oil in a large saucepan over medium heat; sauté garlic for 1 to 2 minutes, then add chopped spinach and basil, cooking until wilted, about 2 minutes. Remove from heat.

  3. Cook pasta in the boiling water according to package directions. Before draining, reserve 1 cup of cooking water.

  4. Add the drained pasta, half of the reserved cooking water, lemon zest, juice, pepper, and 4 ounces of goat cheese to the spinach mixture. Return the pan to medium heat and stir until the cheese melts and pasta is hot; season with salt to taste.

  5. Transfer the pasta to a serving bowl.

  6. Garnish with the remaining crumbled goat cheese and fresh basil or parsley, if desired.
