Goat Cheese Made With Lemon Juice

A simple homemade goat cheese can be crafted using just goat's milk and lemon juice.

Instructions

  1. Heat goat's milk in a nonreactive pot to 180-185 F until foamy, then turn off the heat.

  2. Stir in lemon juice and let the mixture sit for 10 minutes to curdle.

  3. Line a colander with two layers of damp cheesecloth and pour the curdled milk into it.

  4. Gather the cheesecloth around the curds, tie it into a bundle, and hang it over a pot or jar to drain.

  5. Untie the bundle, transfer the cheese to a bowl, and stir in salt to taste.

  6. Shape the cheese into a wheel or log, then refrigerate for a few hours before serving.
