Instructions

  1. Heat 2 inches of vegetable oil in a deep skillet or saucepan to 350°F.

  2. Combine guava paste, vinegar, soy sauce, sugar, and juice in a small saucepan; whisk over low heat until the guava paste melts, then set aside.

  3. Finely chop green onions in a food processor. Add goat cheese, softened cream cheese, ricotta, 2 eggs, and flour; process until well mixed. Season with salt and pepper to taste, then incorporate any desired optional ingredients.

  4. Chill the cheese mixture for at least one hour.

  5. Form the chilled mixture into 1-inch balls. Roll each ball in breadcrumbs until fully coated, then place on a baking sheet and refrigerate until frying.

  6. Fry cheese balls in batches until golden brown. Use a slotted spoon to transfer fried fritters to a paper-towel-lined plate.

  7. Serve fritters warm with the dipping sauce; keep them warm in a 200°F oven if serving later.
