Goan Prawn Balchão
A fiery Goan prawn balchão, similar to a pickle, is prepared with aromatic spices and best served with hot rice.

Instructions

Season prawns with salt and set aside.

In a dry pan, toast dried red chiles, cumin, mustard seeds, cloves, and cinnamon over medium heat until fragrant, then cool.

Grind the toasted spices with ginger, garlic, and vinegar to form a smooth paste.

Heat oil in a pan over medium heat. Stir-fry the prawns until opaque, then remove and set aside.

In the same pan, fry onions until light brown, then add tomato and cook until soft.

Stir in the spice-vinegar paste, sugar, and salt to taste. Cook until oil separates from the mixture.

Return the prawns to the pan, mix well, and cook for 2-3 minutes. Serve with hot rice.
