Goan Prawn Balchão

A fiery Goan prawn balchão, similar to a pickle, is prepared with aromatic spices and best served with hot rice.

Instructions

  1. Season prawns with salt and set aside.

  2. In a dry pan, toast dried red chiles, cumin, mustard seeds, cloves, and cinnamon over medium heat until fragrant, then cool.

  3. Grind the toasted spices with ginger, garlic, and vinegar to form a smooth paste.

  4. Heat oil in a pan over medium heat. Stir-fry the prawns until opaque, then remove and set aside.

  5. In the same pan, fry onions until light brown, then add tomato and cook until soft.

  6. Stir in the spice-vinegar paste, sugar, and salt to taste. Cook until oil separates from the mixture.

  7. Return the prawns to the pan, mix well, and cook for 2-3 minutes. Serve with hot rice.
