Goa Sausage Curry

A simple, hot and tangy Goan sausage curry that pairs perfectly with plain boiled rice.

Instructions

  1. Heat oil in a pot, then fry potato cubes until golden; remove and drain.

  2. In the same pot, fry sliced onions until translucent.

  3. Add tomatoes and green chiles; cook until pulpy.

  4. Stir in hot water and salt, then bring the mixture to a boil.

  5. Add sausage and the fried potatoes; stir, cover, and cook on low for 20 minutes.

  6. Turn off heat and serve the curry with boiled rice.
