Gluten-Free Vegetarian Rice Stuffing

Sauté onion, celery, celery leaves, mushrooms, and rice in margarine until soft and golden.

Transfer the mixture to a greased 2-quart casserole and stir in gluten-free vegetable broth, salt, and poultry seasoning.

Cover and bake for 30 to 35 minutes, until the rice is cooked and liquid absorbed.

Fluff with a fork, then sprinkle with chopped toasted almonds.
