Instructions

  1. Preheat the oven to 250 F and place a cooling rack on a paper towel-lined baking sheet.

  2. Whisk gluten-free flour, cornstarch, salt, and seasonings in a large bowl.

  3. Add club soda and stir until the batter is thick and pourable, adding more club soda by the teaspoon if needed.

  4. Peel and slice onions into rings.

  5. Heat oil in a dutch oven or electric fryer to 350 F.

  6. Coat small batches of onion slices thoroughly with batter.

  7. Carefully lower battered onions into the hot oil and fry for 3 to 4 minutes until golden brown.

  8. Remove fried onions with a slotted spoon, drain on the wire rack, and place the baking sheet in the warm oven to keep them warm while frying subsequent batches.
