Gluten-Free New Orleans-Style Chicken and Sausage Gumbo

Instructions

  1. Whisk oil and flour in a heavy stockpot over medium heat until a deep caramel-colored roux forms.

  2. Add chopped onions, celery, bell pepper, and green onions; stir for 3 minutes until tender, then remove from heat.

  3. In a separate heavy skillet, stir okra over medium heat for 15 minutes until it is no longer sticky, then set aside.

  4. Return the pot to the stove, then add stock, sausage, shredded chicken, tomatoes, reserved okra, garlic, salt, thyme, bay leaves, and cayenne pepper.

  5. Bring the gumbo to a boil, then reduce heat to low and simmer for 30 minutes.

  6. Serve over 1/2 cup cooked rice, garnishing with parsley and Tabasco as desired.
