Gluten-Free French Onion Soup

Instructions

  1. Heat butter and olive oil in a stockpot over medium heat. Add sliced onions, sugar, salt, and pepper; cook for 30-35 minutes until caramelized.

  2. Sprinkle flour over onions, stir, and cook for 90 seconds.

  3. Increase heat to medium-high. Add beef stock, wine, and sherry; bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.

  4. For croutons, cut gluten-free bread into rounds. Broil on low for 3 minutes per side until dry.

  5. Rub croutons with raw garlic and brush with olive oil, then broil for 2 more minutes per side until golden.

  6. Preheat oven to 450 F (232 C).

  7. Place ovenproof crocks on a baking sheet. Ladle soup into each, then top with 2 gluten-free bread rounds or 1/8 cup commercial croutons.

  8. Sprinkle cheese over the croutons. Bake for 12-15 minutes until bubbly and golden brown. Serve immediately.
